All of this was created from a quart (4 cups) of whole milk and about 1/3 cup of yogurt total.

I ended up fully straining all the whey off the thick yogurt to create a fresh Ricotta Cheese.
I must say: OMG it is incredible! Turns out it is so darn easy to make - I couldn't believe it!
